Steeping Note

Here's a simplified guide to brewing delicious new tea for 1 to 2 people:

• Use about 2 teaspoons of tea leaves, which is roughly 5 grams.
• Cool boiled water down to about 158°F (70°C).
• Use about 6.7 ounces (200 ml) of this cooled water.
• Steep the tea leaves for 60 seconds.

How to steep

1. Put the tea leaves into a teapot.
2. Slowly pour the cooled water over the leaves.
3. Cover the teapot and let it steep for a minute.
4. Gently swirl the teapot 2 to 3 times before pouring the tea evenly into cups or another container. Swirling helps to fully release the flavor.
